We never did the following, but these are the new safety guidelines: parboil polk about 10 min. Drain and rinse. Cook in fresh water again for 10 min. Drain and rinse. This is supposed to cook off excessive vitamin A, which can be toxic.
Cook bacon or you can use bacon grease. Take out bacon. Saute onions. Add greens. Break two eggs into greens, saute.

Little One - The Angel of Ava
Dawn, Deidre, and Dina
Ozarks Haints N Hooch features three sisters from the Ozarks, Dawn Larsen, Deidre Larsen McCormick, and Dina Larsen Gillman. They gather bi-monthly remotely from two different states to offer stories about Ozark ghosts, monsters, superstitions, people, places, lore, and history - with a bonus twist, a cocktail themed to the feature story. Grab some hooch and join them, but know that “this ain’t no fancy, academic, check your references, kinda deal. This is four girls from the Ozarks sipping and spewing about haints, hooch, and history.”
